Apple  Muffins




 1   cup  Vegetable Oil
 ½   cup  Water
 1½  cup  Sugar
 3        Eggs
 1   tsp  Vanilla
 2¼  cup  All Purpose Flour
 1   cup  Oatmeal
 ¾   tsp  Baking Soda
 1   tsp  Baking Powder
 ¾   tsp  Salt
 ¼   tsp  Nutmeg
 ¼   tsp  Cinnamon
 3        Apples  [peel, core and grate]
 
 

Preheat oven to 350°.

Grease 18 tins or use muffin cups.

In large bowl combine oil, water, sugar & eggs, beating until creamy.  Mix in vanilla.

In separate bowl combine dry ingredients and slowly add to creamed mixture.

Fold in apples.

Fill muffin cups ¾ full and bake 20 to 25 minutes until top springs back.
